Fallow Buck Rossini Nights

A superb seasonal twist on the traditional nineteenth century classic Tournedos Rossini, reputed to have been created for the composer Gioachino Rossini by either Carême or Escoffier – French master chefs.

The dish comprises a venison fillet, pan-fried in butter, served on a crouton, and topped with a pan fried sliver of foie gras. The dish is finished with a Madeira jus, winter truffles and buttered spinach.
